French Toast Fingers

 | Okay, traditionally this is more of a brunch, but it makes a delicious light lunch too.
Prep time: 5m Cooking time: 10m You'll need: 2 eggs 1/4 cup milk 1 Tbsp sugar 1 tsp vanilla essense (optional) 1-2 pinches of cinnamon (optional) 4 slices of bread butter |
Method:
Combine eggs and milk together, beating until well mixed. Add sugar, vanilla essence and cinnamon, mix together. Cut each slice of bread into 3 strips (trim off crusts if desired). Dip each bread strip into the egg mixture, allowing them to soak for a few seconds on each side until both sides of the bread are well coated. Heat a frying pan until medium-hot and melt enough butter to coat the bottom of the pan. Lightly pan fry each strip of bread until a lovely golden brown colour is reached on both sides.
Serve immediately with some slices of fresh banana - a tasty finger food lunch for toddlers.
To make a full meal for the family lightly panfry slices of fresh banana, this will caramelise them into a delicous naturally sweet acompaniment. Add a strip or two of bacon and drizzle the dish with maple syrup. Serves 2-3.
Tips:
Vanilla essence and cinnamon can be ommited to keep the flavour plain for toddlers if desired.
For authentic french toast, use sliced french stick bread and dust with icing sugar when served.
