Double Chocolate Fudge Biscuits
Even the name sounds delectable. These are a new favourite in our house.

| You'll need: 125 gms butter, softened 1 tsp vanilla essense 1 cup brown sugar 2 Tbsp golden syrup 1 egg 1 & 1/2 cups flour 1/2 tsp baking powder 1 tsp baking soda 1/3 cup of cocoa 1 cup raisins 1 cup chocolate chips | |
Method:
Cream the butter, vanilla essence and sugar with an electric mixer until light and fluffy. Add the egg and mix until smooth. Combine sifted flour, baking powder, baking soda, and cocoa and add to the wet mixture. Lastly pour in the raisins and chocolate chips. Roll into balls and place on a baking tray about 5cm apart, flattening them with a fork or fingers. Bake at 180 degrees celsius for 12 minutes or until firm to touch. Makes 30.

Tips:
1. If the golden syrup comes in a plastic bottle, warm it for 15-20 seconds in the microwave to make it easy to pour.
2. Be sure to sift the cocoa to prevent it leaving lumps in the biscuit mix.
